• The couple that owns this 50 acres estate avoids pesticides and chemicals in the vineyard (hence the mention on the label: “Vigne travaillée à l’ancienne” or “Vines worked the old-fashioned way”).
• Production: 100,000 bottles per year.
SOIL
• Clay and limestone.
GRAPE VARIETY
• 70% Sauvignon.
• 25% Sémillon.
• 5% Muscadelle.
VINIFICATION
• 2 weeks maceration.
• Fermentation in stainless steel vats, temperature controlled.
• Cold maceration before the beginning of the fermentation.
FOOD PAIRING
• This wine can be served as a refreshing aperitif, but also pairs well with fried fish, shellfish and soft cheeses.
TASTING NOTES
• Dry with light floral bouquet, crisp textures and a clean finish. Sauvignon is aromatic and adds freshness, whereas Semillon brings balance, richness and fruits to the blend. The stress induced from lack of fertilization and pesticide produces grapes that are rich in flavor but have a racy edge.
