CHATEAU GAUDIN - PAUILLAC

WINE ESTATE
• Chateau Gaudin is separated from Saint Julien & Saint Estephe by Juillac Creek Valley.
• It faces the Gironde River on the east side and leans toward a forest on the west side. Three of the classified 1st growth out of five come from this area.

SOIL
• Graves

GRAPE VARIETY
• 85% cabernet sauvignon
• 15% merlot
• 25 acres. 8000 plants / acre, 30 to 100 year-old vines

VINIFICATION
• Green grape harvesting (july)
• Thinning out the leaves
• manual harvesting
• Strict sorting of the grapes (on a table)
• De-stemming 100%
• Fermentation in stainless steel & cement vats between 26-28°C
• Maceration : 15 to 20 days with regular stirring of the lees
• Aging: 18 month in French oak. 30% new.

FOOD PAIRING
• T. Bone friendly, game….

TASTING NOTES
• Very ripe and rustic. It is a text book Pauillac, with ripe tannins, a mix of hearty and fruity aromas and long lasting finish.
